What is an easy vegan dinner for kids? Let us look at some quick easy dinner recipes for kids that are 100 percent plant-based.

There are a few tips I want to share right now that makes it so much easier to make kid-friendly dinners that don't take forever to prepare:

- make them fall in love with couscous! Why? because it's super fast to make. It almost feels like fast food but it's not. Buy organic couscous from a health food store and when you prepare it, all you have to do is boil some water and add a little salt and then pour it over the couscous and let it sit like that (covered) for a few minutes and - finished!

To make things easy after school when it is time to eat at our house, sometimes what I do is, I just take a lot of different ingredients, like cucumber, warmed up canned beans or lentils, lettuce, sun dried tomatoes, avocado, olives, celery, organic salsa... and I put them in bowls on the table. 

Then my son can fill up his plate and fill it up with whatever he likes.

To make meals tasty, one trick is to use fresh or dried herbs. i like using fresh rosemary in my boiled and baked potatoes for example, makes it so much better and thyme is something I use a lot too. 


Make sure you have the right kitchen utensils and appliances to make cooking easier and faster! A stick blender is something you should get if you don't own one already, That way you ca make an lot of healthy and yummy soups - it's both easy and quick.

A food precessor and a good knife is great too.

Make sure the little ones dont touch any of it though without supervision. I did have an accident myself once, where I ended up haveing to have stiches in my index finger after trying to get something out of a blender and accidentally pressing the start button at the same time...

Easy Vegan Dinner Recipes for kIDS

If you want to make something fast but healthy, you need to have healthy ingredients at home.

Get some lentil pasta or bean or rice pasta, or can be regular wheat-based pasta too if nobody in the household is gluten-sebnsitive, and get an organic pasta sauce, plus some fresh herbs, like for example parsley (super good for you). That is as quick as it gets and can't really get any easier.

Today I made exactly that for my son's dinner meal. I made chickpea pasta with a ready-made pasta sauce.


This tofu sandwich is quick to make. My child eats them about once a week, sometime with oat-tofu and sometimes with regular.

This recipe is worth giving a try, simple and healthy:

Season the contemts of 2 cans of chickpeas with salt and pepper and place them into a food processor with the can of tomatoes and possibly a little water, about 1 dl/half a cup of water - if you want the soup to be a little less thick.

Place the onion, garlic, sliced carrots and oil in a saucepan and cook/sautee until the onion is soft.

Add the curly kale and rosemary and keep cooking for a few min.

Now add the remaining can of chickpeas. Cook for 5 more min. Add the chickpea/tomatoe mix you pureed in your food processor.

Sometimes even I don't have time to make dinner from scratch. For those days I keep organic vegan burgers in the freezer and place them in the over for 20 minutes and they are done. They are made without soy. And then I just boil potatoes. While the food is in the oven and while the potatoes are boiling, I do something else. Whatever I needed to do that day that made me feel like I have no time to spend in the kitchen.

To that I might possibly also warm up a tomato sauce so the meal won't be that dry. My son loves it, but at times when I make that for him (because I'm in a rush that day) he will ask where the salad is.

Easy Kids Meals

Another Easy Vegan Dinner for Kids

Yesterday the dinner I made was vegan of course, quite healthy and so easy.

Does your child like Asian food? Then this one could work for your family too. 


Ingredients for 2 people:

1 box of white button mushrooms, about 300 geams or 15 mushrooms

1/2 cup or about 60 grams salted peanuts, coarsely chopped

A little fresh or dried turmeric, ginger and garlic (minced if fresh), 1/2 teaspoon each if using dried.

A little black pepper (this could be a problem for some kids, if so - skip)

1 chopped onion

3 tablespoons of plain tomato sauce 

1 tablespoon coconut oil

This is what you need to do:

Cut the onion and mushrooms into small pieces. Chop the peanuts.

Place the onion, turmeric, ginger and garlic in a saucepan together with a little black pepper and some coconut oil and tomato sauce.

If using fresh turmeric, ginger and garlic, mince them first.

Let it saute for a few minutes before you add the mushrooms and peanuts.

Saute for a few additional minutes.

When ready, serve over rice or eat with bread.

Sometimes we eat this with Indian Roti bread. They take just 30 seconds per side to heat up.

Optional salad:

Fresh spinach mixed with some apple cider vinegar, diced tomatoes, cucumber and avocado, salt and pepper. Easy!
